There is no nutritional numerical breakdown of recipes, which I found refreshing. Instead, Daniluk has created her own legend with symbols indicating various dietary values — free of eggs, free of soy, free of dairy, free of tree nuts, low GI being less than 55 on the glycemic index which measures how fast a carbohydrate triggers a rise in circulating blood sugar , gluten-free, and containing 70 per cent raw ingredients.
Many of the recipes cite other benefits on top of reducing inflammation. Daniluk spent five years working on this volume, double-checking that all the studies she cites were peer-reviewed. Her care and attention to detail shows. Daniluk is confident that treating inflammation by diet not drugs will eventually become to be seen as a conventional instead of an alternative treatment. Oz … who are actively promoting a return to a whole food diet. Julie kindly let us reproduce one of her recipes from the book. The one I chose is a feast for both the tastebuds and the eyes.
This recipe is delicious in either a collard leaf or a sheet of nori. Nori seaweed is a good source of iodine and excellent for thyroid function. Like kale, collards are a member of the brassica family, along with broccoli and cauliflower, which are known cancer fighters. Collard leaves are smooth in texture and relatively broad, making them a perfect substitute for a tortilla.
This is a great recipe for entertaining. You can keep the filling the fridge and stuff them when ready. Pulse half the cauliflower, carrots and beet in a food processor until rice-like. Transfer to a mixing bowl. Repeat with remaining cauliflower, carrots and beet. Toss vegetables with remaining ingredients, except collard leaves. Scoop a heaping tablespoon on top of a collard leaf, roll up and enjoy. Males 12 wraps servings.
